Cut from the short loin, the strip steak consists of a muscle that does little work, and so it is particularly tender, although not so tender as the nearby rib eye or tenderloin. The fat content will be more than a tenderloin but less than a rib-eye. Because of its tenderness, the strip steak is suitable for grilling or pan searing.
Our Beef New York Strip Steak is vacuum sealed and sold frozen, two per package, and cut one and a quarter inch thick.
