Our friends at Southern Swiss Dairy supply us with Brown Swiss Cow milk that has a high ratio of fat to protein, making it incredibly rich and delicious milk. The cows produce natural milk without the use of artificial growth hormones or vaccinations. The milk is low-temp pasteurized but it is not homogenized, which allows the cream to rise to the top of each jug.
