Acorn squash is a small variety of winter squash named for its resemblance to a large acorn. It contains vitamin A, niacin, folate, thiamine and vitamin B-6, but it is an especially good source of vitamin C.
Storage: Winter squash will last up to a month in a cool (50 to 55 F) dark cellar or storage area, but only about two weeks in the refrigerator.
